Chiptole Copy Cat Bowl

Chiptole is great, but , making it home is healthier and cheaper! 🔥🔥

Ingredients :

  • ▢1/2 medium red onion coarsely chopped

  • ▢3 cloves garlic

  • ▢2 tablespoons adobo sauce

  • ▢2 tablespoons chili powder

  • ▢2 tablespoons olive oil

  • ▢2 teaspoons ground cumin

  • ▢2 teaspoons dried oregano

  • ▢Salt and freshly ground black pepper

  • ▢4 pounds chicken thighs

Instructions:

  1. To the bowl of a food processor or blender, add red onion, garlic, adobo sauce, chili powder, olive oil, cumin, dried oregano, 1 teaspoon salt, and ½ teaspoon pepper. Blend until smooth. Pour into a measuring cup and add water to reach 1 cup.

  2. Cover and marinate chicken in mixture for a minimum of 1 hour- the longer the better.

  3. Heat skillet with oil/spray and cook up your thighs- internal temp should be about 165. Time will vary-I like mine kind of crispy

  4. Assemble your bowl with your favorite toppings. I used rice, black beans, fresh guacamole, lettuce, tomato, sauteed peppers, and onions. I cooked all of these ingredients in bulk and had them easily on hand all week long to throw together for lunch or dinner.
