Blueberry Coconut Chocolate Oat Bars

Well, that title sure is a mouth full and so are these delicious oat bars.

These easy-to-make bars check all those boxes.

Made with whole ingredients and super easy to whip up!

Recipe Makes 12 Servings

Macros: 188 Calories 5.6 g fat | 23.8 g carbs | 10.7 g protein per bar

Ingredients:

  • 2 servings of unflavored or Vanilla protein powder

  • 1 cup fresh berries of choice - I used blueberries

  • 1/4 tsp baking powder

  • 3 eggs

  • 4 cups oat meal

  • 2-3 servings of your favorite dark chocolate chips - I used Enjoy Life Chocolate chips

  • 4 tbsp of shredded coconut

Instructions:

  1. In a blender blend up your oats into oat flour

  2. In a separate bowl whisk the eggs

  3. Combine together oat flour, baking powder, protein powder and shredded coconut mix well

  4. Preheat oven to 350 degrees

  5. Line a 9 x 11 baking pan with parchment paper or spray with oil

  6. Add in half your chocolate chips into the batter and spread out in the pan

  7. Top with remaining chocolate chips and berries- you can mix the berries in sooner but they will break apart. Personal preference.

  8. Bake in the oven for approximately 15 minutes.

  9. Let cool for a few minutes before slicing if you can wait that long ; )
