Apple Pie Overnight oats

I don’t know about you but one of my most commonly eaten snacks was always an apple with peanut butter. When my health journey began back in college and I started paying attention to what I was eating it is safe to say I had an apple with some peanut butter just about every day. Once I started weighing out my peanut butter well that was depressing but nothing a quick little melt into the microwave couldn’t fix. IYKYK. Well two weeks ago I was faced with a conundrum- I had 1 large apple- too large to eat in one sitting- practically no groceries and I needed to make my overnight oats for the week. If I prep literally nothing else for the I prioritize my oats. Breakfast or post-workout meals are the hardest for me to get in due to my schedule so I NEED to have something ready otherwise I tend to undereat and then hate everyone around me and I become a hangry troll. Not good for any parties involved. I need my oats to be jam-packed with carbs, protein, and some fat so I stay full for hours, I also think plain oatmeal tastes like cardboard so the flavor is of the utmost importance. So what does one do with one very large apple? We make apple pie oats with some peanut butter because….peanut butter is amazing.

Recipe Makes 4 Servings

Macros: 451 calories 16g Fat 49 g Carb 30 g Protein

Ingredients:

  • 2 cups of pasteurized egg whites (can be replaced with liquid of choice, I go egg whites because more protein and there is zero flavor I promise)

  • 8 tbsp of pb 2 powder

  • 2 cups raw oats- I use quick rolled oats

  • 4 tbsp chia seeds

  • 4 tbsp peanut butter of choice

  • 250 grams of apple (aka one big ass apple)

  • cinnamon and honey to taste ( drizzled on top-not included in macros listed)

Instructions:

  1. In a large bowl mix together all dry ingredients.

  2. Mix in liquid of choice and stir to well combined.

  3. Dice up your apple

  4. Divide 1 scoop of oat mixture into each jar or container- I use mason jars.

  5. Top with diced apple

  6. Microwave your 4 tbsp of peanut butter for about 20-30 seconds

  7. Drizzle the top of your oats with peanut butter

  8. Cover and place in the fridge all week long
